Chocolate berry porridge

This porridge has the goodness of oats with a rich chocolatey flavour, sweetened with berries and dates. It is super easy to make, taking 5 minutes, healthy, cheap and the kids will love it!
Ingredients
- ⅔ cup of plant-based milk
- 1 ⅓ cups of water
- 1 cup rolled oats
- 2 dates, pitted and chopped
- 2 teaspoons cocoa powder
- 1 tablespoon ground flax seeds
- 2 teaspoons desiccated coconut (optional)
- 1 teaspoon vanilla essence
- ½ cup frozen blackberries (or other berries of your choice)
Optional toppings:
- 1 tsp ground or slivered almonds, 1 tsp cacao nibs, sliced banana or other chopped fruit
Directions
- Place plant-based milk, water, oats, dates, cocoa powder, vanilla essence, optional coconut and a pinch of salt in a large bowl and microwave on high for 2 minutes. Alternatively, place in a saucepan over medium heat and cook for 2 minutes.
- Stir and add frozen berries and microwave/cook in the pan for a further 3 minutes or until cooked to your liking.
- Optional: top with ground or slivered almonds, cacao nibs and banana.
Chef's Tips
- Fresh fruit works just as well as frozen: this can be added at step 2 so it stews a bit, or just at the end with the other toppings of your choice.
- For a gluten-free alternative, use buckwheat in place of the rolled oats. Just rinse them first and cook as per the recipe directions.
